WHAT IS?
Nougat, is a southern European nougat confection, typically made of honey, sugar, and egg white, with toasted almonds or other nuts, and usually shaped into either a rectangular tablet or a round cake. It is frequently consumed as a traditional Christmas dessert in Spain and Italy as well as countries formerly under the Spanish Empire, particularly in Latin America.
-Jijona nougat: made with chopped almonds and honey. It is regulated by a council of Protected Geographical Indication.
- Hard nougat: it is made with toasted almonds and honey, with egg white, which gives it its special hardness. It is regulated by a council of Protected Geographical Indication.
-Xerta nougat: with hazelnuts or almonds, honey and egg white. It is also a strong nougat. It has a circular shape.
-Agramunt nougat: with almonds or hazelnuts, honey and egg white. It is strong and at the same time very light.
-Toasted egg yolk nougar: made with almonds, sugar, eggs and lemon peel. It seems having arisen when a pastry chef wanted to save too much cinnamon nougat, burning it like Catalan cream.
